Bill Sheehan, chef/owner of Prospect Hill Plantation Inn, is pleased to announce the recent hiring of Chef Christopher Paulsen who comes from Eufaula, Alabama where he was Sous-Chef at the Eufaula Country Club. He is a Charlottesville native and graduate of the local Tandem School and attended Ohio Northern University when his love of cooking moved him to enter culinary school. Chris worked his way through school at La Ferme restaurant in Washington, DC. and graduated from L'Academie de Cuisine in Bethesda, MD.

After graduation, Chef Paulsen began his restaurant career in Atlanta, GA working for several years alongside nationally acclaimed Chef Tom McEachern of The 1848 House in Marietta, Georgia. Christopher is continuing with the tradition of preparing French influenced cuisine that the Sheehan family has been serving at Prospect Hill for almost 30 years.

Chef Paulsen has quickly been making his mark on the local restaurant scene, and now Prospect Hill has begun serving old-fashioned Plantation Sunday Dinners at 6:00 PM. Guests are offered their choice of a glass of house wine, champagne, or Mimosa and then are welcome to stroll the 50 acres of manicured grounds, or sit by a roaring fire in the parlor on cooler afternoons. Dinner will also include a choice of soup or salad, the dinner entrèe, coffee and dessert. The pre-fixe cost will be $55.00 per person (optional wine, 5% VA sales tax and gratuities are not included).
